“Meringues” with strawberry cream

250 g TOP MERINGUE IRCA
150 ml water

Directions:
Mix all ingredients for 6-7 min. at medium speed. Cook at 80-100 °C for 1-1.5 h.

Strawberry cream

650 g strawberry purée
45 g Sosa Gelcrem Cold

Directions:
Mix for 3 minutes. Leave for 30 minutes and then mix again for 1 minute until a smooth and glossy texture is obtained.

325 g strawberry gel
30 g mass of gelatine

Directions:
Melt the gelatine mass at 40 ° C. Add the strawberry gel at room temperature and mix with whipped cream.

Strawberry compote

250 g strawberry purée
50 g strawberries
150 g sugar
7 g pectin NH
3 ml citric acid

Directions:

Put the mashed potato together with the pectin and sugar, add the strawberries, boil. Add citric acid at the end.
