Quinoa salad with chicken, fennel, orange and grapes

Ingredients: (1 serve)

  • 80 g cooked quinoa
  • 80 g diced, cooked chicken breast
  • 30 g fennel
  • 30 g orange fillet
  • 50 g grapes (without seeds)
  • 5 g kinza
  • 20 g olive oil
  • salt
  • Zelta Rieksts salad mix with hemp seeds to taste(roasted)


  1. Cook quinoa in boiling water, strain and let it cool down;
  2. Cook chicken breast and add salt;
  3. Roast the salad seed mix on the stove or in oven(1800C 3 – 5 min) ;
  4. In the plate put the cooked quinoa, add sliced fennel, sliced orange, grapes sliced in half, chopped kinza and cooked chicken breast;
  5. For dressing use olive oil and add salt to taste;
  6. In the end top it off with Zelta Rieksts salad seed mix.
