Quinoa salad with chicken, fennel, orange and grapes

Ingredients: (1 serving)

  • 80 g cooked quinoa
  • 80 g diced, cooked chicken breast
  • 30 g fennel
  • 30 g orange fillet
  • 50 g grapes (seedless)
  • 5 g coriander
  • 20 g olive oil
  • salt
  • Zelta Rieksts salad mix with hemp seeds to taste(toasted)


  1. Cook the quinoa in boiling water, strain and leave to cool down;
  2. Cook the chicken breast and add salt;
  3. Toast the salad seed mix on the stove or in the oven (180 0C for 3 – 5 min);
  4. Put the cooked quinoa on the plate, add sliced fennel, sliced orange, grapes sliced in half, chopped coriander and cooked chicken breast;
  5. For the dressing use olive oil and add salt to taste;
  6. In the end top it off with the Zelta Rieksts salad seed mix.
